Manicotti

History of this Recipe

This recipe is one that I have many fond memories of. My grandparents made it every year for christmas and all of us would go up to their house in Delaware. There was always manicotti and meatballs and everyone was so kind and the world felt small and perfect. Even my brother (who was a typical angsty teenager) would be nice to me for the day. Even during COVID, when we couldn't visit my grandparents anymore, we kept making manicotti.

Equipment

For this recipe you will need 2 large mixing bowls, one for the shell dough and one for the filling. You will also need a wooden spoon to scoop the filling, a small frying pan(4-5 inches in diameter) to cook the shells, and 2 large glass baking dishes to bake the manicotti in.

Eggs 4 Egg 1
Flour 1 cup Parsley 1/2 cup
Water 1 cup Ricotta 2 pounds
Salt 1 teaspoon Mozzarella 4 large balls

Recipe

Total Time: 1 hour 45 mins - 2 hours
Makes: 6-8 Servings

  1. Beat 4 eggs thoroughly in a large mixing bowl
  2. Add flour, water, and salt to the bowl and mix until well combined
  3. Spread 2 tablespoons of your batter in a very thin sheet over your small frying pan. Circle should be 4-5 inches in diameter
  4. Cook for about 30 seconds, do not flip over
  5. Repeat steps 3 and 4 until you have used all of the batter. This should make about 21 shells
  6. Mix all the ingredients for the filling together in a second large mixing bowl
  7. Scoop filling and place it into the middle of a shell. Use more filling than you think that you need
  8. Fold the sides of the shell up and over the filling
  9. Place the shells into your glass baking dishes, that have been coated in tomato sauce, with the fold facing upwards
  10. Repeat steps 7-9 until you have filled all of the shells
  11. Bake at 350 degrees farenheit for 45 minutes
  12. Spread a little extra tomato sauce over the top of the manicotti
  13. Cover the dishes with tinfoil until it is time to serve
